Quiche -- David's Doubled Recipe

This is David's version of Ruth Mock's Quiche Recipe, doubled so that one can be made without onions for me and one can be made with onions for him. As with all recipes, he's played with it a bit, too....

INGREDIENTS

12 slices bacon
1 chopped onion
1 pound frozen mixed broccoli and cauliflower pieces
6 fresh garlic cloves
14 eggs
4 cups grated Cheddar cheese
1 tsp. dried basil
1 tbsp salt
1 tsp. pepper
2 deep dish pie shells
salt

INSTRUCTIONS

Cook bacon until crisp; drain well and crumble. Pour half drippings from skillet. Add vegetables and garlic; sauté lightly. Cover and cook 2 minutes. Beat eggs with salt and pepper. Add eggs, cheese, seasonings, and bacon; pour into crust/ Bake at 325 degrees for 30 to 40 minutes or until filling is set.
